Ingredients

    2 large sweet potatoes, peeled & cut into 1/4" thick strips
    2 Tbsp olive oil
    2 Tbsp chili powder
    Salt, to taste
    1/4 cup fat free Greek yogurt
    1 chipotle pepper, seeded & minced
    1/2 tsp adobo sauce
    1 tsp honey

Directions

1. Preheat oven to 400 degrees. Line a large cookie sheet with parchment paper and set aside.

2. In a large bowl, toss sweet potato strips with oil, chili powder and salt. Spread in a single layer on prepared baking sheet, leaving space between pieces.

3. In a small bowl, mix together yogurt, chipotle pepper, adobo sauce, honey and salt to taste. Cover and refrigerate until ready to use.

4. Bake 20 minutes or until cooked through. Broil on high an additional 3 - 4 minutes to brown and crisp the tops. Serve with a side of dipping sauce.
