Ingredients

Banana, fresh, 4 small (6" to 6-7/8" long) mashed.
Egg, fresh, whole, raw, 2 large
Butter, salted, 9 tbsp
Granulated Sugar, 3/4 cup
Vanilla extract, 1 tsp
Flour, white, 1-1/4 cup
Baking Soda, 1/2 tsp
Baking Powder, 1.0 tsp
*Salt 1 tsp if using unsalted butter
Raisins, .75 cup (not packed)
Alcohol, brandy, 1/3 cup
Chopped Walnut, 1/3 cup
Tips
Preheat oven to 325 degrees F.
Grease loaf pan.
Use 1/3 cup of brandy, bourbon or dark rum to reconstitute the golden raisins.
Directions
Reconstitute raisins by boiling in brandy, let sit covered for 1 hour, drain excess liquid before adding to recipe.
Mix flour, soda, powder together. Set aside.
Melt butter. Mix well with sugar. Add in eggs 1 at a time mixing well. Add mashed banana, vanilla, raisins & walnuts. Mix well. Add flour mixture in thirds mixing well after each addition. Pour into greased loaf pan and bake at 325 degrees F for 60-75 minutes. Loaf is done when toothpick comes out almost clean.
