Introduction

My Mom's recipe has always been my favorite but I didn't want to have to abstain so I lightened it up by changing pork sausage meat to lean ground pork and eliminating the 1 cup of butter her recipe called for to be poured over (I used chicken stock instead and it worked just fine). The spices absolutely make this recipe delicious. You truly won't miss all the fat. Ingredients

    8 slices whole wheat bread
    1.5 tbsp butter
    2 cups chopped onions
    3 cups chopped celery
    1 pound lean ground pork
    Spice mix (I usually mix these together before adding):
    1 tsp salt
    1/2 tsp thyme
    1/2 tsp savory
    1/2 tsp mace
    1/4 tsp turmeric
    1/2 tsp sage
    1/2 tsp parsley
    1-2 tsp poultry seasoning (optional)
    2 whole eggs
    2 egg whites
    1-2 cups of chicken broth (depends on how dry the mixture is)


Tips

I make a homemade gravy from fat free chicken broth, bit of flour whisked in to thicken it and some skim milk plus various seasonings (salt, pepper, garlic, thyme and sage) to top this with. So good that sometimes I make this for our main dish. :-)


Directions

Cube bread and lightly spray with cooking spray before putting in oven at about 275 degrees to dry out into "breadcrumbs". Time varies depending on how fresh the bread is so keep an eye on it. Put bread cubes in a big bowl when done.

Saute onions and celery for a few minutes in butter. Add pork and cook until no more pink remains. Thoroughly mix in seasonings in the last few minutes of cooking. Pour meat and veggie mixture over bread cubes.

In small bowl, whisk eggs and egg whites until well mixed. Pour over meat, veggie and bread mixture along with about half a cup of chicken stock. Then continue adding more until mixture is moistened but not "wet".

Spoon into large casserole dish, cover with foil and bake at 400 degrees for about 40 minutes.
