Ingredients

1/4 cup ground flax seed meal
1 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 packet sweetener (I used Truvia) or more
1/8 teaspoon sea salt (optional)
1 egg, beaten
1 teaspoon melted butter or other oil
Tips
You may want to add more sweetener, or increase the amount of oil. You could also use coconut oil instead of butter.
Directions
Mix the flax meal,cinnamon, baking powder, sweetener, and sea salt (if using) in a coffee mug. Then add the egg and melted butter. Mix with dry ingredients. Microwave one minute until firm.
Turn out and serve with butter or cream cheese or toast before applying spread -- or slice and use to make sandwiches.
