I needed to replenish my veggies. I took what ever I had left and made this salad I needed to replenish my veggies. I took what ever I had left and made this salad

Ingredients

    Iceberg Lettuce (salad), 1.5 cup, shredded or chopped
    Carrots, raw, 1 large (7-1/4" to 8-1/2" long)
    Celery, raw, 1 stalk, large (11"-12" long)
    green onions, 1 oz.
    Cabbage, fresh, 1 cup, chopped
    Cabbage, red, fresh, 1 cup, chopped
    *Bok Choy, raw-shreaded, 1.5 cup
    Beet greens, fresh, 1.5 cup

Tips

I needed to use up all my last weeks veggies. This is a good meal or a side dish before a meal in place of soup


Directions

Cup up lettuce
Shred carrot
Chunked up celery
Cut onion
Scrambled up egg and let cool
Chopped peppers
Sliced chicken nuggets
