Introduction

Ingredients

    1 Large potato
    1 cup chopped red cabbage
    2 medium tomatoes sliced
    1 cup shredded carrots
    1/2 cup shredded Mozzarella cheese
    1tbsp Pizza sauce

Tips

You can substitute with any of your favourite vegetables but remember not to bake it too long because the longer vegetables cook the more nutrients they lose.


Directions

Firstly, Preheat oven to 450 degrees Fahrenheit

Secondly, slice potato lengthwise in 8 slices and place in a pot with water and boil for 10mins or until tender but not until its falling apart.

Thirdly, whilst the potato is cooking grate/chop your vegetables and cheese.

Fourthly, grease a pizza pan.

Fifthly, after the potato is finished cooking drain out the water and place the slices of potato on the pizza pan (you can put them together and separate them after baking or you can leave them apart, the choice is yours).

Lastly, cover the potatoes with the pizza sauce thinly then use half the amount of cheese to cover the sauce then top with the vegetables followed by the rest of the cheese.

Place it in the oven and bake for 10mins or until the cheese melts.

After baking leave it to cool for 5mins then you can enjoy your pizza alternative warm.
