Ingredients

    1/2 c. Israeli couscous
    1/2 pint grape tomatoes, halved
    3 green onions/scallions, sliced
    2 T Pine Nuts
    4 oz. soft goat cheese
    Drizzle lemon juice, vinegar and olive oil to dress

Directions

1. Cook couscous according to package directions.
2. Combine all ingredients in a bowl and mix until well incorporated.

Serving Size: Makes about 4 1-cup servings
