Ingredients

    1 pound lean ground beef
    1 chopped yellow onion
    1 chopped green bell pepper
    1 clove chopped raw garlic
    1 tsp cumin
    1 tsp cayenne pepper
    1 tbsp oregano
    1 tsp cinnamon
    1 can beef broth
    1 can kidney beans
    1 can black beans
    1 can pure pumpkin puree
    2 cans diced tomatoes

    olive oil
    salt and pepper

    optional toppings:
    sour cream
    chopped scallions
    bacon bits
    baked acorn squash with maple syrup

Tips

I baked a peeled and chopped acorn squash in the oven at 400 degrees for 40 mins with maple syrup, salt and pepper, and a tbsp of butter to spoon over my chili servings. It was a big hit!


Directions

Pour some olive oil into a hot skillet and brown your ground beef. Transfer beef to crock pot on HIGH. Saute the chopped onion, pepper, cumin, cayenne, oregano, cinnamon, and garlic in the leftover beef juices and transfer to crock pot once tender. Add beef broth, kidney beans, black beans, pumpkin puree, and diced tomatoes and cook on HIGH for about 2 hours or on LOW for 4 hours.

Top with your favorite chili toppings!
