Introduction
This stew is a staple in my family. Sometimes known as "Christmas Stew", we traditionally serve it every Christmas Eve. It's fantastic in the fall months as well, and makes your house smell magnificent while it cooks. This stew is a staple in my family. Ingredients

2 lbs beef sirloin stew meat (cut into cubes)
6 carrots, chopped
1 sweet onion, chopped
6 stalks celery, chopped
3 lbs redskin potatoes, chopped
3 tbsp. olive oil
black pepper
cumin
4 cups tomato juice
Tips
You can cook on medium or high for a shorter amount of time; however the longer the stew cooks, the more tender the beef will become.
Serve with a good crusty bread to soak up all of the delicious sauce.
Directions
Dredge stewing beef in corn starch. Brown in olive oil. Put in slow cooker. Use a little bit of beef broth or water to get the flavorful drippings from the bottom of the pan used to brown the meat - add this to the slow cooker as well.
Chop vegetables (I chop them pretty large and rustic, but use your preference on size) and add to slow cooker. Season with cumin and black pepper.
Pour tomato juice over ingredients. If necessary, add water so that liquids cover meat and vegetables.
Cook on low for 8 hours, stirring very occasionally. Add more seasonings as needed.
