Ingredients

    3 eggs beaten
    1 cup honey, divided
    1 teaspoon vanilla
    1 teaspoon baking soda
    3 cups almond flour
    2 apples cored, peeled, cut into small slices
    1/2 cup chopped walnuts
    2 cups fresh cranberries
    1/4 cup soft butter
    4 tablespoons butter



Directions

In small sauce pan combine cranberries, 2 tablespoons butter, and 1/2 cup honey. Heat on medium heat till berries are tender and mushy. Mix eggs,1/2 cup honey, vanilla,1/4 cup of soft butter and baking soda in large mixing bowl. Beat till well blended. Preheat oven at 350 degrees. Add almond flour and beat 2 more minutes. Stir in sliced apples, and chopped walnuts. Put almond flour mixture into 9 x 13 buttered baking dish spread around with spatula to cover bottom of pan. Pour cranberry mixture over top of batter. Bake for about 30 -35 minutes or until toothpick comes out clean. Cool. Store in refrigerator.
