Introduction

Ingredients

    Flour Tortilla, 10", 3 servings
    Olive Oil, 2 tbsp
    Onions, raw, .5 cup, chopped
    Bell Pepper, Orange, .5 cup
    Beans, black, 1.5 cup
    Sriracha, 5 tbsp
    Sea Salt, 1 tsp
    Nutritional Yeast, B12 enhanced, 4 Tbs

Tips

If you want, get smaller tortillas, and adjust the size of the filling, to make snack-sized burritos. And, Vegan cheese shreds may be added before wrapping, as may petite diced tomatoes, salsa, guacamole....


Directions

Heat oil in a skillet; add chopped onions and saute until soft. Add drained black beans and warm through until they are soft and smash-able; after the beans are somewhat smashed, add salt, peppers, wheat berries and sriracha. Turn off stove, and continue to stir, blending the flavors and textures.

Divide into thirds; spoon a third of the mixture into waiting tortillas; wrap and serve.

Serving Size: Makes 3 eight ounce burritos.
