Ingredients

    2 precooked boneless skinless chicken breasts
    1 can 28 oz. whole pear tomatoes with fresh basil
    1 can 14 oz. whole pear tomatoes with fresh basil
    1 can of coconut milk
    1 can of Madras curry sauce
    Red/Orange/Yellow bell peppers chopped into mouth sized pieces
    1/2 baked sweet potato skin removed
    1 large sweet onion quartered/then sliced
    (other vegetables to taste such as carrots, celery, etc.)

Tips

Easy, quick and delicious. Leave out the chicken and it is an easy vegetarian dish that is gluten/grain free with low sugar!


Directions

Throw everything in the pot and heat!
