Ingredients

    4 Bell Peppers.. I use Green
    10 oz. Thinly Sliced Roast Beef
    8 slices of Provolone Cheese
    1 large Sweet onion sliced
    1 can Mushrooms
    4 Tbs. Butter
    4 Tbs. Olive Oil
    1 Tbs Minced Garlic
    Sea Salt and Pepper To taste

Directions

Preheat oven to 400 degrees.cut green peppers into halves, clean seeds out. Brown onion, garlic and mushrooms in sauce pan until carmelized, add roasted beef (sliced) to onion mixture and simmer additional 8 minutes. put 1 slice of provolone on the bottom of each pepper, fill the pepper with meat mixture and bake for 15minutes, take out and add another slice of cheese on top and bake again for 5-8 minutes

    To answer rmcunham...the butter and olive oil are used together to saute everything...the butter for flavor and the olive oil for good health. You can change the quantity if you like. - 6/21/15

    Recipe doesn't say when to use butter and olive oil. I just used butter to sauté the onions and garlic. If I had used both oil and butter it would have been too much. Also I prebaked the peppers 15 minutes. They were still a little crunchy. Otherwise a very good recipe. - 7/26/14
