Ingredients

    1-1.5 lb bag Baby Dutch Yellow Potatoes
    1 shallot, halved and sliced
    4 whole garlic cloves
    2 T. extra virgin olive oil
    1 T. flat-leaf parsley, chopped
    Sea salt & freshly cracked pepper

Directions

Preheat oven to 375° and line a rimmed baking sheet with parchment paper. Quarter the potatoes. Halve and slice the shallot. Spread the potatoes, shallot slices, and garlic onto the baking sheet. Toss with the olive oil and season with sea salt and freshly cracked pepper. Smooth the mixture into a single layer to promote even cooking. Sprinkle the top with the parsley. Bake 20-30 minutes, or until the potatoes and garlic cloves are fork tender.
