Ingredients

    .50 c pumpkin puree
    .50 c honey
    4 large eggs
    .25 tsp salt
    .25 baking soda
    .50 tsp cinnamon
    1 tsp. pumpkin pie spice
    .25 c plus 2 tbs coconut flour

Directions

preheat oven to 350 degrees. combine all dry ingredients. add remaining ingredients using hand mixer. let batter stand 5 mins to allow flour to absorb moisture. spray muffin tins. bake for 35 min or until toothpick comes out clean. muffin liners not necessary.
