Ingredients

    ***The measurements below are for 32 muffin bites or 16 normal-sized muffins. I tripled the recipe when I made it.

    1/5 cups wheat bran
    1 cup Almond Breeze unsweetened vanilla almond milk
    1/2 cup unsweetened applesauce
    1 egg
    2/3 cup light brown sugar
    1/2 teaspoon vanilla extract
    1/2 cup all-purpose white flour
    1 teaspoon baking soda
    1 teaspoon baking powder
    1/2 teaspoon salt
    1 cup cranberries

Tips

Great with blueberries, too.


Directions

1. Preheat oven to 375 degrees F (190 degrees C). Spray muffins cups with non-stick spray.
2. Mix together wheat bran and almond milk. Let stand for 10 minutes.
3. In a large bowl, mix together applesauce, egg, brown sugar, and vanilla. Stir in bran mixture. Add flour, baking soda, baking powder, and salt. Stir until just blended. Fold in cranberries.
4. Scoop into muffin cups.
5. Bake for about 15 minutes. Baking time will vary by oven and size of muffin cups.

Serving Size: Makes about 96 bite-sized muffins or 48 normal-sized muffins
