Introduction

Ingredients

    8 c whole, raw cranberries, washed
    1 c Splenda
    2 cups water
    4 small to medium apples washed and chopped
    1 c crushed pineapple, drained
    zest and flesh of one orange
    1/2 c walnuts, chopped
    1 oz Triple Sec (orange liqueor)

Tips

This should not be a runny sauce. It should keep it's shape on a dinner plate.
Prep time and cook time are estimates. I prefer to cook it until almost all the water is evaporated, but I haven't actually timed it.


Directions

Bring Splenda and 2 cups water to boil and put whole raw cranberries into pan. Stir at boiling until berries pop their skins - at least 5 minutes, longer if you like your berries more mashed. Keep stirring as water evaporates so that it does not cook dry. You want most of the water to cook off. Let cool a little and taste to see if berries are sweet enough for you. Add Splenda a little at a time if you want it sweeter. Cool. Add chopped apples, pineapple, orange zest and flesh, triple sec, and walnuts and stir thoroughly. Keep refrigerated. Flavors improve on standing, so make this at least one day ahead of serving.
