Introduction

Number of Servings: 4

Ingredients

    300gm raw Cauliflower
    100gm or 10 Cherry Tomatoes
    40gm Parsley
    40gm Fresh Mint
    3 Spring Onions
    2tbls Fresh Lemon Juice
    4 Tbls Olive Oil

Tips

I have been making this salad for the last few summers. It is wonderfully light and goes very well with any grilled meat or Seafood.


Directions

1. Chop the Cauliflower into a small dice.
2. Process the Cauliflower in food processor until Cauliflower resembles the size of cracked wheat (Burgul). Place into a large bowl.
3. Finely chop the Parsley, Mint and Spring Onions andadd to the riced Cauliflower.
4. Dice the Cherry Tomatoes and add.
5.Combine Olive Oil and Lemon juice and dress the salad.



Serving Size: makes 4 1-cup servings
