Number of Servings: 8

Ingredients

    1 15-oz can of pumpkin puree
    3/4 tsp Cinnamon, ground
    1/2 tsp Nutmeg, ground
    1/4 tsp Cloves, ground
    1/4 Ginger, ground
    3 to 4 Tbsp Truvia Natural Sweetener, depending on desired sweetness
    2 large eggs
    Coconut Oil spray (or vegetable oil spary)
    15 grams crushed Pecans

Directions

Mix together all ingredients except for the pecans.
Spray a mini-muffin tin (24 cups) with the spray oil.
Scoop 1 Tbsp of mixture into each muffin cup.
Sprinkle each cup with the crushed pecans.
Bake at 350 degrees for 15-20 minutes, until a toothpick inserted comes out clean.
