Ingredients

    1 cup dried lentils
    1 Tspoon olive oil
    1 large onion, chopped
    1 cup mushrooms, cut in pieces
    1 cup grated nuts (cashews, almonds, walnuts etc)
    1 Tspoon lemon juice
    1 Tspoon tamari/ soy sauce/ balsamic vinegar
    1 cup bread crumbs
    1 tspoon cumin
    1 tspoon oregano
    1 tspoon thyme
    salt and pepper

Directions

Cook lentils for 40 minutes (or more).
Drain and move into a large mixing bowl.
Sautee onions in oil, on medium heat, until soft.
Add the mushrooms and sautee for 3-4 minutes more.
Mix with lentils when ready, and add condiments. Mix until blend is somewhat tight, but moist too.
If it ends up a little too moist, thicken with some more breadcrumbs.
Bake at 175 C degrees for 30 minutes.
Let it cool for 15 minutes at least before you serve.
