Introduction

This soup not only satisfies low-carb requirements but also has complex flavors and uses leftover Thanksgiving (or other holiday) turkey! Ingredients

    + 2 4-cup packages of Trader Joe's Low-Fat Turkey Broth, plus 1 cup (or add 1 cup of home-made turkey roasting-pan broth, fat removed)
    + 2-3 large leeks, raw, sliced (yield 4 cups)
    + Kale leaves, raw, chopped (4 cups, no stems)
    + Turkey, cooked, light and dark meat, diced (1 lb.)
    + Ginger, minced (1 Tbsp)
    + Garlic, minced (3 cloves)
    + Fennel bulb, raw, diced (1 cup)

Tips

You may substitute any quantity of homemade turkey broth, fat removed, for the same quantity of store-bought broth included in the ingredients list.


Directions

Pour turkey broth into a soup pot (at least 6 quarts in volume). Add to the broth all other ingredients. Place the pot over medium heat; allow to come to a slow boil and stir. Reduce heat to simmer for the remaining time; soup can stay on low heat longer to build and blend flavor, but do remember to stir occasionally.
