Ingredients

    1 cup medium grain rice, 100g mushrooms, 1 onion, 1 tbsp olive oil, 1 clove garlic, 1/4 tsp grated ginger, 1/4 tsp garam masala, 1/2 pint stock (or water), 1tsp salt if using water

Directions

Slice the onions and mushrooms. Rince and drain rice. Heat the olive oil and fry the onion and crushed garlic until the onions begin to brown. Add the mushrooms and fry for a minute or two more. Add the rice, ginger, garam masala, stock or water and salt if using. Cover with a tight fitting lid (add a layer of tin foil if the lid is dodgy) and cook on the lowest heat for 25 minutes without opening the lid at all (no peeking!). Turn off the heat and leave to stand for 5 more minutes before serving.
