Introduction

Ingredients

500 g self raising flour
1 pinch salt
3 cups coconut/weetbix/etc
1 cup raw sugar
5 tsp baking powder
100 ml sunflower seeds
50 ml linseeds
1 egg
125 ml oil
125 g butter (melted)
300 ml buttermilk
5 ml vanilla essence
Tips
Recipe can easily be doubled
Instead of weetbix, oats, bran, muesli, rice puffs, etc could be used.
Instead of buttermilk, fresh milk with lemon jiuice can be used.
Directions
1. Preheat oven to 180'C
2. Mix all the dry ingredients in a large mixing bowl
3. Add the wet ingredients and mix until mixture comes together
4. Push mixture into the baking pan until even.
5. Mark out and cut shapes of rusks
6. Bake for 35 - 40 minutes or until a scewer comes out clean.
7. Let it cool on drying racks
8. Once cooled, dry out at 95'C (fan forced) for 8 hours+ until dry.
Serving Size: Makes approximately 33 rusks
