Ingredients

1 onion, chopped
2 cloves garlic, diced
1 package of turkey kielbasa, sliced (Optional)
1 large can whole tomatoes
1 can yellow corn
2 cans great northern beans
2 cups beef broth (or vegetable)
1 cup fresh spinach
1 tsp red pepper flakes
Salt and Pepper as needed
Tips
It is best to use low- or no-sodium ingredients (broth, vegetables, etc).
The kielbasa and beef broth can be omitted and substituted for vegetable broth for a vegetarian version.
Directions
Chop onion and garlic. Add to pan with a spray of oil. Cook until translucent, then add sliced kielbasa and brown. Break apart whole canned tomatoes by hand, add to soup, then add the remaining tomato juice to the pan. Add the drained corn, drained beans, and 2 cups of broth. Add red pepper flakes and salt/pepper to taste. Heat on simmer for 15 minutes. Add spinach just before serving.
