This is a delicious family recipe. I make this healthier by reducing the amount of butter and using low-fat sour cream, but not everyone in the family will bring a lower-fat version to the potluck. Ingredients

    3 packages of frozen, chopped spinach, cooked without salt, well-drained (this is key--- use your hands to wring it out)
    2 cans of artichoke hearts, drained, lightly chopped
    1 stick of butter, melted
    1/2 cup red or sweet yellow onion, finely chopped
    16 oz container sour cream
    1/2 to 1 cup grated Parmesan Cheese (nutritional info uses the larger amount)
    opt: salt and pepper to taste (nutritional info does NOT have seasoning)

Tips

The key to this recipe is making sure the artichokes and cooked spinach are as well-drained as possible.


Directions

Preheat oven to 375. Lightly spray a 3 quart baking pan with PAM or similar product. Set aside. While spinach and artichokes are draining, saute the onion in the butter in a small pan. In a large mixing bowl, combine spinach, artichoke hearts, onion mix, sour cream, and 1/4 to 1/2 cup grated Parmesan cheese. Mix thoroughly; pour into prepared baking dish, distributing evenly. Sprinkle with 1/4 to 1/2 cup remaining cheese. Bake for 30 to 45 minutes until top is browned. Reheats well. Can be made up to two days ahead.
