Introduction

Ingredients

    2 cans Goya kidney beans
    2 cans Goya black beans
    1 can tomato sauce or crushed tomatoes
    1 stalk celery, 1 green pepper, 1/2 onion
    1/2 can yellow corn
    8 oz ground beef
    minced garlic
    seasonings of your choice

Tips

My kids like to eat this with tortilla chips or corn bread. Obviously for calorie reasons, I eat mine without! Also good with a small dab of low fat sour cream. (I've also made this adding chopped zucchini, cauliflower & carrots, omitting beef, on stuffed zucchini boats with the chili to get an extra veggie...so good!)


Directions

Brown ground beef (leave out for vegetarian option).
Sautee onion, celery, & green pepper (unless already included in your can of sauce). Add all to tomato sauce in a large pot. Add 2 cans black beans, 2 cans kidney beans, and 1/2 can corn (I rinse all to remove as much sodium as possible before adding to the pot). Season as desired. (I add cayenne to my bowl since I am the only one who likes it spicy.)
Let simmer on low for 1 hour.

Serving Size: makes approximately 8-10 1-cup servings (depending on how many extra veggies you add & the size of your can of sauce)
