Ingredients

    olive oil
    ground chicken
    ground turkey
    can of lentils, rinsed
    onion
    garlic
    can of diced green chilies
    can of tomato paste
    can of tomato sauce
    water
    malt vinegar
    cumin
    cayenne pepper
    tumeric
    taco seasoning
    salt
    pepper

Tips

Please note that I used unsalted tomato sauce and tomato paste, which I could not find the database. The sodium is much lower using these products. If you do not use no sodium/low sodium, don't add salt. Tastes better the next day and is perfect for freezing.


Directions

brown meat in oil; add onion, garlic and chilies and cook for 5 minutes; add lentils, tomato paste, tomato sauce, water (I used 1/2 cup) all spices, stir together and let simmer for about 20 minutes, stirring occasionally. Let simmer longer if you prefer.

Serving Size: makes 6 1.5 cup servings
