Introduction

Ingredients

    4 Carrots, diced
    1 cup Cauliflower (3-4 florettes), chopped
    1 medium Onion, diced
    1 head Garlic, minced
    Basil, 1 cup fresh or 3 tbsp frozen-chopped
    2 cups Swanson Chicken Broth 99% Fat Free (for vegetarian or vegan, substitute vegetable broth).
    1 quart Tomatoes, red, ripe, canned, wedges in tomato juice (I can my own organically grown)
    1 tsp Salt (to taste)
    dash black pepper (to taste)
    2 tsp Canola Oil

Directions

Chop carrots, cauliflower, onion and garlic. saute onions and garlic in oil until onions are translucent. Add carrots and cauliflower. Add chicken broth and basil. Cook until vegetables are slightly soft. Transfer to blender and puree. Return to pot. Puree tomatoes in blender and combine with ingredients in pot. Add salt and pepper to taste. Stir to combine well and cook just until heated through (about 5 min). Garnish with parmesian cheese and a baguette or my homemade croutons.
