Introduction

Delicious, nutritionally-dense, and easy! A great family meal and they reheat wonderfully! Delicious, nutritionally-dense, and easy! A great family meal and they reheat wonderfully!
Number of Servings: 6

Ingredients

    1 can - Black beans
    3 Tortillas halved
    1 pack of tofu
    3 cloves of garlic
    1 large onion
    1 pint of grape tomatoes
    1 avocado
    1 lime - juiced
    2 cups greek yogurt
    1 T sriracha (optional)
    1 c cooked quinoa
    2 cups cheese

Directions

Preheat your oven to 400. Mix together your black beans and quinoa. Divide your quinoa mix among the 6 tortilla halves. Divide up your tofu on top of that. Puree together the garlic, tomatoes, and onion and spoon on top. Top with your choice of cheese and put in the oven for 12 minutes or until the tortillas start to crisp up. Mix together the yogurt, juice from one lime, avocado, and sriracha (or other spices of your choice - chili powder is good, too!) Use this mixture to top your cooked tostadas.

Serving Size: 1 tortilla half
