Ingredients

    2 tbsp Extra Virgin Olive Oil
    .5 lb Turkey Sausage links
    3 cups sauteed spinach
    9 eggs
    1/2 cup shredded cheddar cheese

Directions


Preheat oven to 350 degrees.

Remove sausage links from casings. Heat one tablespoon of olive oil in a skillet and cook until no longer pink, about 10 minutes. Put into meduim sized bowl and set aside. Add another tablespoon of olive oil and sautee spinach until wilted. Remove from pan and add to the same bowl as the sausage. Add 1/2 cup cheddar cheese to the bowl and stir to combine.

Crack 9 eggs in large mixing bowl and whisk together with salt and pepper to taste.

Line standard (12) muffin tin with paper liners or spray with cooking spray. Place sausage spinach mixture about 2/3 the way full in each tin. Pour egg mixture over the top of each tin until there is about 1/4 of an inch of space at the top.

Place in oven and cook for 25 minutes.
