Ingredients

    1. 1 medium sized head of fresh cauliflower (or a large bag of frozen cauliflower).

    2. 1 can of asparagus.

    3. 1 clove of garlic.

    4. Salt and pepper to taste.

Tips

For a little extra texture, add a rounded tablespoon of margarine or 2 tablespoons of canola oil.


Directions

1. Wash cauliflower and cut into florets.

2. Steam in a large pot with 1/2 cup of water. Allow to steam for about 10 minutes, or until it is soft enough to mash easily.

3. Add one can of asparagus (canned works best, as it is soggy and gives a more buttery texture).

4. Add garlic, salt and pepper, and mash together with a potato masher or a large fork. (If you have a magic bullet or similar blender, this works wonderfully also).

Serving Size: Makes about 3 cups of mashed cauliflower
