Ingredients

    Eggs
    Spinach
    Onion
    Green peppers
    Olive Oil
    Cayenne or crushed red pepper
    Pepper
    Salt- to taste
    Pam

Tips

You can add any kind of meat, cheese, vegetables you would like. These freeze well.


Directions

Saute onions, peppers, spinach and any other vegetable you would like in olive oil. Let cool. Mix together a dozen eggs and the vegetables in a bowl. Spray a muffin tin with Pam, add mix. Bake at 350 for about 30-40 minutes.
