Like PF Chang's! The trick is to saute the snow peas quickly over pretty high heat, tossing often, until they're hot, yet still crispy and bright green. Ingredients

    2 cups fresh snow peas
    2 tbsp vegetable oil
    1/8 tsp salt
    dash ground black pepper
    2 cloves garlic, minced

Directions

1. Prepare snow peas by cutting off the tips on each end.
2. Preheat oil in skillet over medium / high heat
3. Saute snow peas in oil with salt and black pepper for 2.5 to 3 minutes, tossing often, until peas are cooked but still crispy. Add minced garlic, toss a bit more, then immediately pour onto sering platter. If you keep the garlic in too long, it will scorch, so don't keep it in the pan for longer than about ten seconds.
