Ingredients

1 cup black Rice
2 cups water
1 package Butterball Everyday Fresh Ground Turkey (4 Oz), 7 serving
1 jar Spaghetti Sauce, Classico Tomato & Basil
6 Bell peppers (Red, Yellow, Orange)
1 container Trader Joe's Mirepoix
2 tsp Olive Oil
1 Tsp salt (or more to taste)
1/2 tsp pepper
1 tsp chili powder
1 tsp cumin
1 tsp thyme
1/2 tsp coriander
A pinch of Cheyenne to give it a kick
Or any combo of your favorite chili spices
Tips
Serve with sour cream, salsa and cheddar.
Directions
Prepare rice. Bring 2 cups water to a boil, add rice and a little salt. Simmer until water is absorbed. While the rice is cooking, clean and cut the peppers in half and lay them in a casserole dish.
In a Sauté pan sauté the mirepoix in olive oil until tender. Add ground turkey and sauté until almost cooked. Mix in spices and sauté a little bit more. Add the cooked rice and jar of tomato sauce. Mix together well. Stuff all the meat mixture into the peppers. Bake at 375 for 30 minutes until cooked. Garnish with cheddar cheese and sour cream (calories not included).
