Introduction

I had a pound of stew beef, but didn't want traditional beef stew. So, I made a take on italian white bean stew and added quinoa for added protein. I had a pound of stew beef, but didn't want traditional beef stew. So, I made a take on italian white bean stew and added quinoa for added protein.
Number of Servings: 8

Ingredients

    1 lb stew beef
    1/2 cup onions, chopped
    1 cup carrots, diced
    3 cloves garlic, minced
    2 cans cannellini beans, drained and rinsed
    28 oz petite diced tomatoes
    1/2 tsp dried thyme
    2 tsp dried basil
    1/2 tsp dried red pepper flakes
    1 1/2 cup beef stock
    2 cups cooked quinoa

Tips

Most stews call for carbs of some sort (potatoes, rice, pasta). I cannot eat these things since having gastric surgery. Quinoa gives you that carb component with added protein and it doesn't expand in your stomach like rice or pasta so it won't overfill you.


Directions

Place all ingredients except quinoa into bowl of slow cooker. Cook, covered, on HIGH for 4 hours. While stew is cooking, cook quinoa. After carrots are cooked, add quinoa and heat until heated through.
