Introduction

Delicious, tasty chilli to add to rice, baked potato or just on its own! Delicious, tasty chilli to add to rice, baked potato or just on its own!

Ingredients

    *Lean Turkey Breast Mince, 500 grams
    Onions, raw, 1 cup, sliced
    Jalapeno Peppers, 2 pepper - finely sliced/chopped (to taste. Remove seeds if you want to reduce the heat, add 1/2 to 1 or no chilli if you like it mild)
    Bell peppers (Green, Red, Yellow, Orange), sliced, 1 cup Smoked Paprika or chipotle, 1 tbsp (to taste)
    Chilli Powder, 2 tsp (to taste)
    Canned Tomatoes, 1 can
    Chicken Stock, 200ml (appx)
    Tomato Puree (If wanted/needed, to thicken and add oomph)

Tips

Pre-heat your slow cooker.

You shouldn't need any added salt due to the tomatoes and stock but once it's been cooking for a while, taste and season.


Directions

1. Brown mince on stove top (I have a slow cooker which allows me to use the pot on the stove first - very handy)

2. Add onion and saute for appx 4 mins

3. Add the peppers (chilli if using and bell)- saute for 2-3 mins

4. Add paprika and stir in, saute for 1 min. Then add chilli powder and do the same.

5. Add tomatoes and stir in - cook for appx 3 ,ins, bring to boil and reduce heat to simmer.

6' Add stock and do as with tomatoes.

7. Add tomato puree to get desired consistency and add an extra tomato flavour

8. Bring to boil and place in pre-heated slow cooker for 4 hours on high (6-8 hrs on med/low)

Serve with accompaniments such as guacamole/soured cream (light is just as tasty as regular), avacados, rice...anything else you fancy. Just don't forget to add up your calories :-)
