Ingredients

    1 lb bag of Red Lentils- rinsed and tiny rocks picked out
    1 lean ham steak- bite size pieces
    1 chunky chopped onion
    2-3 chopped carrots
    2 celery stalks
    1/2 chopped red pepper
    4 cups of any stock
    1 tea garlic power ( the real thing is healthier)
    1 1/2 tea cumin
    1 1/2 TB dijon mustard (spicy is nice for heat)
    Black pepper to taste
    *Salt after! Salt inhibits water absorption from lentils.


Tips

Can be easily adapted to vegetarian recipe


Directions

Saute veggies. Add ham til color on sides. Add stock, spices and lentils. Bring to a boil, reduce to simmer and stir occasionally. Taste often to avoid mushy lentils and adjust spices to taste. May need to add extra water but use with caution. Salt last.
