Ingredients

    2 - 15 oz. cans of reduced sodium black beans, drained and rinsed
    2 - 14.5 oz. cans of diced tomatoes, no salt added
    1 T. cocoa powder
    1/4 tsp. salt
    1/4 tsp. chili powder
    1 small can mild green chilis
    3 scallions, chopped
    1 red onion, diced
    1/3 c. cilantro, roughly chopped
    1/4 c. water
    2 cups sliced or cubed yellow squash

Tips

We like to add a dollop of non-fat, plain greek yogurt on top of our chili. It tastes just like sour cream, without the fat and high calories.


Directions

Spray slower cooker with non-stick cooking spray. Add all ingredients to slow cooker and stir to mix. Cover and cook on low 4 to 5 hours.
