    1 tbsp olive oil
    1 cup cooked brown rice
    1 cup chopped red bell pepper
    1 cup chopped onion
    1-2 cups chopped broccoli (slightly steamed)
    1-2 cups chopped cabbage
    1 pound cooked left over beef such top sirloin or tri tip, sliced into bite size pieces
    1-2 tbsp soy sauce or Bragg's Liquid Aminos
    1/2 cup chicken broth
    approx. 2 tsp splenda


I originally made this with left over stir fried rice that had peas and corn in it and added the extra broccoli and cabbage and dumped in the meat and decided it needed some moisture so I eye-balled the soy sauce, broth and splenda (my husband can't have sugar). It was really tasty.


Heat oil in large skillet. Saute onions and bell pepper till softened. Add steamed broccoli and cabbage. Saute some more. Add cooked rice and cooked meat. Add soy sauce, broth and splenda. Salt and pepper to taste.

Serving Size: makes 8 1 cup servings
