Ingredients

    Onion, 1 medium, chopped
    Celery, 2 medium stalks, chopped
    Red bell pepper, 1 medium, chopped
    Chili powder, 2 tbsp
    Onion powder, 1 tsp
    Garlic powder, 1 tsp
    Paprika, 1 tbsp
    Cumin powder, 1.5 tbsp
    Red pepper flakes or cayenne pepper, 1 tsp
    Mushrooms, quartered, 1 cup
    Red kidney beans, 1.5 cups
    White Navy beans, 1.5 cups
    Black beans, 1 cup
    Yellow sweet corn, 1 small can
    Diced tomatoes, 1 can

Tips

Start 2 hours earlier if you're using dried beans (Cook for 6-8 hours)


Directions

1) Chop onion and celery and sautee in pre-heated pan at medium heat until onion turns clear
2) Add red bell pepper to pan and cook for
3) Turn heat to low, add spices and sautee for about 2 minutes
4) Add vegetables, chopped mushrooms and all beans to slow cooker
5) Cook on high for 4-6 hours
