Introduction

We have pork in the freezer, but usually ground beef would be used in this.

I can't keep celery in the house. It goes bad before it gets used and doesn't freeze well on its own if I chop it in bulk and freeze. I sub celery seed for the flavor.

Ingredients

    2# ground pork
    28 oz. diced tomatoes, undrained
    29 oz. tomato puree
    15 oz. canned red beans, drained
    1 1/2 cup chopped onion
    1 cup diced bell pepper
    1/2 tsp. celery seed (or 1/2 cup chopped fresh celery)
    2 TBS. chili powder (you can always add more later)
    1 tsp. ground cumin
    1 1/2 tsp. garlic powder
    1/2 tsp. salt
    1/2 tsp. ground black pepper
    1/2 tsp. oregano
    1 TBS sugar
    pinch of ground chipotle (or cayenne, if you are brave)

Directions

1) In a skillet (if finishing in crock pot) or dutch oven (that chili will be completely made in), brown meat. If you don't have time to simmer the chili before serving, soften the onion and bell pepper in the skillet too.

2) Add all other ingredients, stirring well.

3) Cook in a 4-5 quart crock pot for at least 4 hours on low (2 hours on high). Resist the urge to take the lid off of the crock pot while cooking. Or simmer on the stove over low heat for 1-1 1/2 hours, stirring often.
