Ingredients

Yukon gold potatoes (about 4 medium-large)
1/2 tsp of each:
rock salt
basil
paprika
oregano
dill weed
garlic powder
herbs de provence
1/8 cup extra virgin olive oil
Directions
Preheat oven to 475F.
Wash potatoes and peel if desired (I never do). Cut into uniform pieces, about 1 1/2 inch cubes. I usually cut a larger potato into 10 or 12 pieces, and small ones into 4 or 6.
In a large bowl, combine olive oil and all of the spices. Add red pepper flakes if desired. Add the potatoes and stir/toss until all the potatoes are coated. Alternatively, pour the oil/spices into a large ziploc bag with the potatoes and seal tightly. Shake around until all the potatoes are coated.
Place in a single layer in a baking dish big enough for all the potatoes. Bake for about 30 minutes, turning a few times to make sure all sides are browned. Use a knife to make sure the potatoes are cooked in the middle.
