Ingredients

    1 cup diced onion
    1 cup diced carrots
    1 cup diced celery
    2 jalapeno peppers, diced (optional)
    8 cups chicken broth
    1 cup tomato sauce
    2.5 cups diced tomatoes
    1 3/4 cup lentils
    2 tablespoon cumin
    1 tablespoon curry poweder
    salt and pepper to taste

Directions

saute vegetables until tender. add diced tomatoes and simmer for 10 minutes. add chicken broth and bring to boil. Add lentils and reduce. once lentils are cooked, add additional stock to desired consistency.

Serving Size: makes 12 1 cup servings
