Introduction

Ingredients

    4 cups peeled and cubed eggplant
    1 large tomato cubed
    1 large onion cubed
    1 1/2 cups drained chickpeas (garbanzo beans)
    1 tsp. italian seasoning
    1 Tbsp. olive oil
    Salt to taste

Tips

Delicious served with a dollop of plain yogurt on a tortilla or over rice. For some heat, add cayenne pepper or your favorite hot sauce.


Directions

Heat the olive oil and then add the rest of the ingredients, allowing them to slowly simmer until well cooked. Add a little water during the cooking process to prevent sticking if needed.
