Ingredients

    1 24 oz pkg Red Lentils
    6 c water
    1 brown onion, chopped
    1 carrot, chopped
    1 celery stalk, chopped
    1 12 oz pkg Applewood Bacon, sliced and chopped
    2 Tbsp Cumin
    1 Tbsp Simple Asia Ginger Garlic Seasoning
    1 Tsp Ground Tumeric

Directions

Chop sliced raw bacon and cook in stock pot until crisp. Drain and set aside. Cook onion, carrot, and celery until limp, drain and set aside. Pour off bacon grease and discard. Add red lentils and water, bring to boil. Add reserved bacon and vegetables and simmer until lentils are soft and soup is thick; about 90 min. Serve hot.

Serving Size: makes 6 1.5 cup servings
