Ingredients

    *Hormel Extra Lean Pork Sirloin Roast, 16 oz
    Baked Potato (baked potatoes), 4 potato (2-1/3" x 4-3/4") peeled and diced
    Onions, raw, .25 cup, chopped
    Granny smith apple - 2 med. apples peeled and diced
    Thyme, ground, 1.5 tsp
    *McCormick Lemon Butter Dill Seasfood Seasoning, 1 tsp
    *McCormick Lemon & Pepper, 1 tsp
    1/2 stick(1/4 cup) Butter, salted
    Salt, 1.5 tsp or to taste
    *Apple Cider Vinegar, 2 tbsp

Directions

Peel and dice apples, potatoes and onion. Set aside. You can slice the pork roast into medallions and lightly skillet fry them to speed up the cook time and parboil the potatoes. Then after the pork and potatoes are almost done you layer them into a baking pan. Add the apples, onion and seasonings. On the top of the potatoes slice stick of butter into little pieces. Dribble apple cider vinegar on top. Bake at around 400 degrees for 30 minutes or until potatoes are done. If you did not parboil the potatoes and fry the medallions it will take about 1 hour.
