Ingredients

    1 cup whole wheat flour
    1/4 cup ground flax seeds
    1/4 cup white wheat flour
    3 teaspoons of baking powder
    1/2 teaspoon of salt
    2 large eggs
    1 1/4 cup mashed bananas
    2 tablespoons of plain yogurt
    1/3 cup melted butter
    4 packages of Stevia or 1/2 cup of sugar or sugar substitute
    3/4 cup cranberries, frozen or fresh
    1/2 teaspoon of lemon juice

Directions

Preheat oven to 350 degrees or 175 Celsius. Grease a 2 1/2 x 8 1/2 inch loaf pan with butter. Whisk the flour, flax, oats, baking powder and salt together in a bowl and set aside. Whisk the eggs in a mixing bowl until smooth. Beat in bananas, yogurt and melted butter. Add the Stevia, cranberries and lemon juice. Fold into the oats/flour mixture and mix until smooth. Pour mixture into the greased loaf pan. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45-50 minutes. Cool in pan for 10 minutes before removing to cool completely on a wire rack.
