Number of Servings: 8

Ingredients

    1 large onion - or several smaller onions - chopped
    4 large carrots - cut into bit size pieces
    2.5 lbs lean stew beef
    3 cups beef broth
    2 cups red wine (optional - could increase broth)
    2 T Dijon Mustard
    3 T Tomato Paste
    1 T thyme
    3 bay leaves
    2 T Worchestershire Sauce

Tips

Could also add mushrooms, potatoes etc. I serve over barley but noodles, etc would also work.


Directions

Cut onions and carrots into bite size pieces and put into crock pot. Add beef (I have even added a "chuck" of frozen stew meat). Mix remaining ingredients and pour over meat.

If using frozen meat I suggest Hi setting for 6-8 hours, 6-8 hours on low if meat is thawed.

Serving Size: Makes about 8 1 cup servings
