Ingredients

4 ounces ground turkey
3 eggs, well beaten
1/3 cup finely chopped onions
2 tablespoons, finely diced celery
1 cup fresh bean sprouts (you can round the cup up a little if you like)

Directions
Spray a non-stick pan with cooking spray. Brown the ground turkey in the pan on the stove, breaking it into small crumbles while frying. Drain on paper towel and set aside.
Chop your onions and celery.
In a medium sized bowl, beat the eggs. Then add the onions, celery, bean sprouts, and browned turkey.
Fry by 1/4 cupfuls, Keep patties shaped wth pancake turner by pushing egg back into the patties. When set and brown on one side, turn and brown the other side. serve hot with rice or cauliflower rice and sauce.
While frying patties, sprinkle with salt if desired
EGG FOO YUNG SAUCE
Combine in a saucepan:
1/4 cup low sodium soy sauce
1 tablespoon cornstarch
2 teaspoons sugar
3/4 cup water
Cook, stirring constantly, until sauce bubbles and clears. Serve over Egg Foo Yung and rice (or cauliflower rice). Makes 1 cup of sauce.
