Ingredients

2/3 cup finely ground almond meal
1/4 cup half and half cream (or low-carb non-dairy milk of your choice)
2 paper packets of Splenda (or Truvia, Swerve, etc)
2 Tbsp melted butter or buttery spread
3 whole eggs, separated
1 tbsp vanilla extract
Nonstick cooking spray for your waffle iron
Tips
This recipe smells/tastes like waffle-cone waffles with 1 tbsp vanilla. If you prefer a more bland waffle, reduce vanilla extract to 1 tsp.
Directions
Crack eggs and carefully separate yolks into a bowl large enough to whisk into. Whisk eggs until they form firm peaks and ripples when you lift the whisk.
Place egg yolks, almond meal, cream, sweetener, melted butter and vanilla into another bowl and mix together until lump-free.
Gently fold the egg/almond/butter mixture into the fluffy egg whites. You don't have to be too precious about it, just go slowly and mix until the white egg streaks have been blended away.
Spray a Belgian waffle iron liberally with non-stick cooking spray and pour 1 cup of waffle batter into the center of the iron. Close and let bake 2-3 minutes per side then flip the iron and allow the other side to cook through.
If cooked fully, it will fall out of the iron and be golden brown.
Serving Size: Makes 3 whole waffles, one waffle per serving
